If you’ve been following us for a while, you know cake decorating isn’t really our thing (we have a more “rustic” feel), but we wanted to make something special for a party recently. We started with our lemon cake recipe that we already trusted and just doubled it into a two-layer cake. We even added some of our lemon curd in the middle.

And we think it turned out great! So delicious and pretty damn cute. Someone even told us it was the best lemon cake they’d ever had, which is a huge compliment to us.

It reminded us that trying something new in the kitchen doesn’t mean you suddenly need to become an expert overnight. Sometimes getting out of your comfort zone or trying something you’re not totally confident in can be really good.

Make this Chocolate Stuffed French Toast instead. It’s amazing and super easy and a great Mother’s Day treat. And trust us, don’t skip the cherry sauce.

Tips:
1. Don't use pre-sliced bread. Cut it yourself so you can make nice, thick slices.
2. Cut a pocket into each bread slice. So much easier than trying to sandwich 2 pieces together.
3. Use chocolate bars. No piping bags needed. 
4. Heat frozen fruit to pour over. Easy to make any time of year. Try it with blueberries, raspberries, strawberries, peaches, etc.

Chocolate stuffed French toast with cherry compote is exactly as good as it sounds. And it's totally beginner friendly.

Have you ever had stuffed French toast? 

Here's what you'll need:
- challah bread, sliced thick
- milk
- eggs
- sugar
- nutmeg (optional)
- semi sweet chocolate squares
- butter
- powdered sugar for dusting

Cherry Compote:
- frozen cherries
- sugar
- water
- lemon (zest + juice)
- almond extract (optional)
- pinch of salt
- cornstarch

Chocolate stuffed French toast with cherry compote is exactly as good as it sounds. And it's totally beginner friendly!

Have you ever had stuffed French toast? 

Here's what you'll need:
4 slices challah bread, sliced thick
½ cup milk
2 eggs
2 tbsp sugar
Fresh grated nutmeg
4 semi sweet chocolate squares
2 tbsp butter
Powdered sugar for dusting

Cherry Compote:
1 lb frozen cherries
½ cup sugar
⅓ cup water
Zest + juice of 1 lemon
½ tsp almond extract (optional)
Pinch of salt
½ tbsp cornstarch

Steps:
1. Cook the compote ingredients in a pot (except cornstarch) for 25 min, then mix cornstarch with some of the liquid and add to the pot.
2. Cut into the top of each bread slice making a pocket and stuff the chocolate in.
3. Mix the eggs, milk, nutmeg, and sugar together, then soak the bread in the mixture for 1 min each side.
4. Cook the bread in a pan for a few minutes. 
5. Serve French toast with cherry compote on top, dust with powdered sugar.

These pretzel cookies are made with brown butter, butterfinger pieces, and milk chocolate. The perfect salty-sweet treat!

Ingredients:

2 ¼ cups flour spooned & leveled (280g)
1 cup butter (2 sticks)
¾ cup granulated sugar
¾ cup brown sugar packed
2 eggs
1 tsp salt
2 tsp vanilla extract
¾ tsp baking soda
½ cup butterfinger pieces
1 cup milk chocolate chips
1 cup broken pretzel twists

Steps: 

1. Preheat oven to 350F. Line baking sheet with parchment.
2. Melt butter in a pan until browned but not burnt (5-10 min), then chill in fridge or cool over ice bath. 
3. Mix flour, baking soda, salt in a bowl. 
4. In another bowl, mix sugars and brown butter. 
5. Add eggs, vanilla, then dry ingredients.
6. Fold in mix-ins. 
7. Scoop dough and bake cookies for 9-11 min.

This cinnamon zucchini bread is simple, cozy, and made with basic ingredients. No fancy mixer, no hard steps, just a loaf that turns out so good every time.
