This cod cooks right in a coconut broth with lemongrass, ginger, fish sauce, Thai chilies, and lime, so you get a ton of flavor without much active cooking. 

It comes together in under an hour, including prep time, making it totally weeknight-friendly, which is what you need now that it's back-to-school season! And it’s basically a one-pot meal. Tip: heat up some frozen rice for a super easy and time-saving side.

It's full of fresh ingredients, pre-cooked lentils (so easy), and an amazing dressing. We've been making it for a long time and have shared it with a lot of people. It's great for potlucks, meal prep, dinner parties, and busy weeknights. Plus you may convince some lentil haters that they're actually delicious with this recipe!

    Did you know that with some dried herbs, spices, a Did you know that with some dried herbs, spices, and buttermilk powder you can make your own homemade ranch seasoning? 

We use this to make our ranch snack mix, toss over potatoes or roasted veggies, or mix up with a little milk to make a quick ranch dressing. 

We like a little spicy kick from chipotle pepper powder, but that's totally optional.
