Frozen Raspberry Cottage Cheese Bites
Like many people, we love ice cream and cheesecake, but we also love making treats that don’t take quite as much effort. Enter: Frozen Raspberry Cottage Cheese Bites. These tiny desserts taste like little drops of fruity frozen cheesecake or cheesecake ice cream, without all of the heaviness!
These bites are insanely delicious and super easy to put together, but if you’re looking for another reason to make these, they’re also high in protein and calcium! They also don’t need any churning like normal ice cream, or baking like regular cheesecake. The cottage cheese blends up beautifully in a blender or food processor with a little maple syrup and a touch of salt for balance, and then the mixture is frozen in mini muffin cups with a dollop of raspberry preserves and a fresh raspberry for flavor (and beauty, obviously).
You can make these in mini silicone muffin cups or freeze them in an old egg carton, if you’ve misplaced your mini muffin tin like we did! This recipe makes about 24 mini muffin cups or bites. If you have any extra blended cottage cheese, do yourself a favor and eat it chilled with more fresh berries.
Ingredients in Raspberry Cottage Cheese Bites
These frozen treats are super easy to make, and they don’t require too many ingredients! Here’s everything you’ll need:
- Cottage cheese – we like to use 4% milkfat cottage cheese. We haven’t tried this with lower fat cottage cheese, so if you do, please let us know in the comments how it turned out!
- Maple syrup – we have tried this recipe with honey before, which is delicious, but honey crystallizes differently than maple syrup. We found maple syrup to work best.
- Salt – if your cottage cheese is salty, though, you can reduce this to just a pinch.
- Raspberry jam – if you don’t like raspberry jam, feel free to use another kind of preserves.
- Fresh raspberries – if you don’t like raspberries, use any other berry here.
How to Make these Frozen Raspberry Cottage Cheese Bites
To make these cottage cheese bites, you’ll need a blender or a food processor. Using one of these kitchen gadgets blend the cottage cheese, maple syrup, and salt until smooth. Scoop about 1 heaping tablespoon of blended cottage cheese into each mini muffin liner/cup.
Top each cottage cheese cup with 1 teaspoon of raspberry jam and swirl it in with a toothpick.
Place a raspberry on top of each cup, pushing it in a bit so that it sticks, and then place all of the cottage cheese bites into the freezer for at least 2 or 3 hours.
When they’re frozen, they’re ready to eat!

- Mini Muffin Tin (can also use empty egg carton with mini muffin liners)
Ingredients
- 2 cups 4% milkfat cottage cheese
- 3 tbsp maple syrup
- ¼ tsp salt
- 24 tsp raspberry jam
- 24 raspberries
Instructions
- In a blender or food processor, blend the cottage cheese, maple syrup, and salt until smooth.
- Scoop about 1 heaping tbsp of blended cottage cheese into each mini muffin liner/cup.
- Top each cottage cheese cup with 1 tsp of raspberry jam and swirl it in with a toothpick.
- Place a raspberry on top of each cup, pushing it in a little so that it sticks.
- Place all of the cottage cheese bites into the freezer for at least 2 or 3 hours. When they’re frozen, they’re ready to eat!
