Ingredients

  • 1/2 honeydew melon seeds removed (about 4 cups cubed)
  • 1 to 1 ½ cup water
  • 1 Persian cucumber peeled and chopped
  • ½ cup plain Greek yogurt
  • 2 to 3 tbsp honey
  • Juice of 1 lime
  • Pinch Sea salt

Instructions

  • Remove the honeydew rind and cut the fruit into cubes. Place into a freezer safe container with a lid and freeze it for 2 hours or up to overnight.

  • When ready to make the smoothie, remove the frozen honeydew from the freezer and let it thaw for about 10 minutes while you prepare the other ingredients.
  • Add water to a blender, followed by the cucumber, yogurt, honey, lime juice, salt, and frozen honeydew.
    1 to 1 ½ cup water, 1 Persian cucumber, ½ cup plain Greek yogurt, 2 to 3 tbsp honey, Juice of 1 lime, Pinch Sea salt
  • Blend until smooth. If it has trouble blending, use a tamper or add more water, 1 tablespoon at a time.
  • Taste for sweetness and add more honey if desired (if your cucumber is bitter, you might want more). Pour into your favorite glass and enjoy!

Notes

Tip for cutting honeydew: place the cut side of the melon down onto a surface and slice all of the rind off with a sharp knife, careful not to cut off too much of the fruit. You can also cut the melon into strips and remove the fruit from the rind that way, then cube it.
