The bitter coffee pairs so well with the caramelly sweetness of the condensed milk. It’s giving Vietnamese and Thai coffee vibes to your standard morning cup of caffeine!

And now as recipe creators, we sometimes don’t use up a whole can of sweetened condensed milk if we need some for a recipe. And since nothing is better than a caffeine or sugar rush all at once, we love using the leftovers like this.

What we used:

•    Protein: our Moroccan Inspired Spiced Chicken (recipe on the blog) and grilled it instead of pan roasting it. 

•    Sauces: hummus, tzatziki, and a lemony tahini sauce. (Recipes in our upcoming newsletter!)

•    Freshies: fresh fruits and veggies that complement the spiced chicken and flavorful sauces.

•    Extras: pita, feta, couscous. 

Build your pita: add protein, sauces, fresh stuff, and any extras to a warm pita (stuff it in the pocket or eat it like a taco). We each went for “the works” and added pretty much everything. It was delicious!

This Skillet Potatoes and Fennel recipe is anything but boring. The potatoes are creamy and rich, the fennel is crunchy and has a mild anise flavor, and the red onion is sweet and soft. The veggies are fantastic on their own, but they get dressed up with a little lemony and herby chermoula sauce at the end for extra pizzazz. 

The veggies:

•    Creamer potatoes
•    Fennel
•    Red Onion
•    Olive oil

The sauce:

•    Lemon (zest, juice)
•    Herbs (cilantro, parsley)
•    Spices (garlic, smoked paprika, red pepper flakes, s&p)
•    Olive oil

Why you’ll love it:

•    Parboiling the potatoes and fennel cuts down on the overall cooking time and helps them pan roast faster.
•    It’s hearty, satisfying, and easy to make. Plus it’s plant-based and gluten-free, but even the biggest meat eaters won’t notice!

We make a lot of soups. It’s just one of those things that has become kind of a signature move in the kitchen for us, even when the weather warms up a bit.

Tortilla Soup is an ultra classic comforting soup with rich history and tradition, and there are so many ways to make it. But we think our version takes an easy and accessible approach that anyone can make at home in under an hour. It’s savory, slightly smoky, a little spicy, and full of deep, delicious flavor. It’s packed with shredded chicken and topped with crispy baked tortilla strips and whatever else you want!

For the soup, you’ll need:

•    Chicken
•    Veg (onions, poblanos, jalapeños)
•    Chipotle peppers in adobo
•    Salt, cumin, chili powder, adobo seasoning
•    Fire roasted tomatoes and tomato paste
•    Chicken broth

We love enchiladas and we love lasagna and casseroles, so we thought, why not combine them? 

Unlike actual enchiladas that have filling rolled up inside tortillas, this Tex-Mex Chicken Enchilada Casserole is built almost like a lasagna. It’s got layers of tortillas, seasoned chicken, melty cheese, and creamy salsa verde. We’ve made this for a family gathering before (we doubled the recipe) and it was a hit.

You can easily divide the ingredients in half to make this in an 8x8 casserole dish instead too!

The stereotypes are true: we love avocado toast and eat it often. And despite what some people may think, it’s not the reason some Millennials can’t buy a house. 

You can add tomatoes, feta or queso fresco, a squeeze of lime, or whatever else you want. 

We usually prefer to keep it super simple. Just toast up some bread (we like sourdough) and add some sliced avocado and seasoning on top (we prefer Lawry’s). That’s all you need!
