This creamy chipotle corn dip is sweet, smoky, a little spicy, and loaded with queso fresco, lime, cilantro and obviously CORN. It's great as a dip for tortilla chips, but we've also got other ideas for how to eat it. Enjoy it:

It's full of fresh ingredients, pre-cooked lentils (so easy), and an amazing dressing. We've been making it for a long time and have shared it with a lot of people. It's great for potlucks, meal prep, dinner parties, and busy weeknights. Plus you may convince some lentil haters that they're actually delicious with this recipe!

We use this to make our ranch snack mix, toss over potatoes or roasted veggies, or mix up with a little milk to make a quick ranch dressing. 

We like a little spicy kick from chipotle pepper powder, but that's totally optional.
