Easy Chickpea Salad Sandwich

This astonishingly easy and incredibly delicious sandwich is a plant-based and healthful alternative to its more famous chicken salad sandwich cousin, with all of the flavor and none of the mayo.

Ingredients

Chickpea Salad

  • 1 15oz can chickpeas, drained & rinsed
  • 2 tbsp olive oil
  • 1 tbsp chopped parsley
  • 2 green onions, diced
  • 1 tsp cumin powder
  • ¼ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Sandwich

  • 2 Roma tomatoes, sliced
  • 1 avocado, pitted and sliced
  • Handful of arugula
  • 6 slices bread of your choice
  • Chickpea salad

Instructions

  • In a bowl, mash chickpeas with a fork. Mix in olive oil, parsley, green onions, spices, salt, and pepper.
  • Assemble a sandwich. On one slice of bread, place ⅓ of the mashed avocado. Top with tomato slices and then chickpea salad. Cover with arugula and second piece of bread.
  • Repeat steps to make 2 additional sandwiches for your friends, family, or yourself, or keep the seasoned chickpeas and sandwich toppings for a midnight snack!
