Ingredients

PB & J Crackers

  • 12 tsp peanut butter
  • 12 tsp jam
  • 12 crackers

Avocado Mash Rice Cakes

  • 2 rice cakes
  • ½ avocado
  • Chipotle chili powder to taste
  • Salt to taste

Everything But the Bagel Cucumber Bites

  • ½ English cucumber sliced into 12 rounds
  • 6 tbsp whipped cream cheese
  • Everything bagel seasoning to taste

Hummus Stuffed Bell Peppers

  • 6 baby bell peppers
  • 6 tbsp hummus
  • 4 green olives pitted, each sliced into 3 slices
  • 6 tsp feta cheese

Sweet and Sour Fruit

  • 2 to 4 wedges or slices watermelon, mango, pineapple, or other fresh fruit
  • Tajin seasoning to taste

Instructions

PB & J Crackers

  • Spread about 1 teaspoon of peanut butter on top of each cracker.
    12 tsp peanut butter, 12 crackers
  • Spread about 1 teaspoon of jam on top of the peanut butter on each cracker.
    12 tsp jam
  • Serve immediately.

Avocado Mash Rice Cakes

  • Using a fork, mash up half of an avocado on a plate.
    ½ avocado
  • Spread half of the mashed avocado onto one rice cake, and the other half onto the other rice cake.
    2 rice cakes
  • Season the avocado mash on top of each rice cake with a pinch of salt and a sprinkle of chipotle pepper powder, to taste.
    Chipotle chili powder, Salt
  • Serve immediately. Note: do not prepare ahead of time or the rice cakes will become soggy.

Everything But the Bagel Cucumber Bites

  • Spread about ½ tablespoon of whipped cream cheese onto each cucumber slice.
    ½ English cucumber, 6 tbsp whipped cream cheese
  • Season with your desired amount of everything bagel seasoning.

  • Serve immediately.

Hummus Stuffed Bell Peppers

  • Cut each baby bell pepper in half lengthwise and remove the seeds in the middle.
    6 baby bell peppers
  • Fill each halved bell pepper with ½ tbsp of hummus.
    6 tbsp hummus
  • Place 1 olive slice on top of the hummus in each pepper half.
    4 green olives
  • Add about ½ teaspoon of crumbled feta cheese on top of the hummus and olives in each bell pepper half.
    6 tsp feta cheese

Sweet and Sour Fruit

  • Sprinkle your desired amount of tajin on top of each wedge or slice of fruit.
    Tajin seasoning, 2 to 4 wedges or slices watermelon, mango, pineapple, or other fresh fruit
  • Serve immediately.
