Crispy Avocado Tacos with Chipotle Crema

Crispy on the outside, creamy on the inside, these oven-fried Crispy Avocado Tacos prove you don't need meat to make an incredible taco. Panko-breaded, baked avocado and easy smoky chipotle crema come together for a dinner that's simple, satisfying, and full of satisfying textures and flavors.

Ingredients

Crispy Avocados

  • 2 large Hass avocados each cut into 8 wedges
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp salt
  • Olive oil spray or cooking spray

Chipotle Crema

  • ½ cup sour cream
  • 2 chipotle peppers in adobo
  • ½ tbsp lime juice
  • ½ tbsp water use more for a thinner sauce
  • ¼ tsp sea salt

Additional Taco Toppings

  • 8 Tortillas warmed or lightly toasted
  • Shredded purple cabbage optional
  • Pico de gallo optional
  • Cilantro optional

Instructions

Crispy Avocados

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Add the eggs to a shallow dish or pie tin and whisk.

  • In a second shallow dish or pie tin, mix panko with the spices.
    1 cup panko breadcrumbs, 1 tsp chili powder, 1 tsp onion powder, 1 tsp salt
  • Dip each wedge of avocado in the egg, then coat in panko mixture.
    2 large Hass avocados
  • Place each breaded avocado wedge on the baking sheet.
  • Spray the avocado wedges with olive oil spray or cooking spray.

  • Bake for 10 minutes, then remove from oven and use tongs to turn each avocado over. Spray them again and bake for another 10-15 minutes, then remove from oven.

Chipotle Crema

  • Add the chipotle crema ingredients to a high sided container and blend with an immersion blender until smooth. Taste for seasoning (add more salt if desired). Note: you can also use a regular blender or a food processer to blend up the sauce.
    ½ cup sour cream, 2 chipotle peppers in adobo, ½ tbsp lime juice, ½ tbsp water, ¼ tsp sea salt

Assembly

  • If using, place some shredded purple cabbage on top of a tortilla.

  • Place 2 avocado wedges on top of the cabbage.
  • Top with pico de gallo or salsa and a generous spoonful of chipotle crema.

  • Sprinkle with cilantro, if using.

Notes

  • Spray the breaded avocado generously before baking. This will help them bake up crispy. 
  • Flip them over halfway through baking and spray them again. This will make sure both sides of the avocado pieces will be crispy and toasted.
  • Warm your tortillas before assembling the tacos. Stick them in the microwave for 15-30 seconds in a tortilla warmer (or place them on a plate wrapped in a damp paper towel), or toast them in a pan for a minute or 2 on each side. 
  • Top with your favorite toppings, like classic pico de gallo or mango pico de gallo, shredded cabbage, and cilantro.
