Caprese Salad Salad

That's right, Caprese Salad Salad. This salad has everything you love about a traditional Caprese Salad, all tossed with crisp, green lettuce and a simple balsamic vinaigrette. The result is a healthy, tasty, shareable salad that will satisfy your cravings for caprese salad and leafy greens.

Ingredients

Balsamic Vinaigrette

  • 3 tbsp olive oil, extra virgin
  • 2 tbsp balsamic vinegar
  • 2 tsp spicy brown mustard
  • 2 tsp maple syrup
  • salt and pepper, to taste

Salad

  • 4 cups green leaf lettuce, chopped
  • 1 cup fresh mozzarella, cubed
  • 1 cup basil leaves, cut into ribbons
  • 1 cup tomatoes, medium diced
  • Balsamic Vinaigrette

Instructions

Balsamic Vinaigrette

  • To make the vinaigrette, mix the ingredients in a jar and cover the jar with a lid.
  • Shake the jar until dressing is fully combined and emulsified. If you don't have a jar, you can use a bowl and whisk instead.

Salad

  • To make the salad, place all of the ingredients in a large bowl and drizzle with dressing.
  • Gently toss the salad, making sure the dressing evenly coats all of the ingredients.
