Berries and Cream with Mint and Honey Lemon Syrup

These Berries and Cream with Mint and Honey Lemon Syrup is a refreshing mix of strawberries, blackberries, raspberries, blueberries, and mint tossed in a honey lemon syrup and topped with mascarpone cream.

Ingredients

Mixed Berries and Mint

  • 1 lb strawberries, hulled & sliced
  • 6 oz blackberries
  • 6 oz blueberries
  • 6 oz raspberries
  • 10 mint leaves, ribboned

Honey Lemon Syrup

  • Zest of 1 lemon
  • Juice of 1 lemon
  • 3 tbsp honey

Mascarpone Cream

  • 1 ½ cups heavy whipping cream
  • 1 cup mascarpone
  • 4 tbsp honey
  • ¼ tsp sea salt

Instructions

  • Combine all of the berries and mint in a large bowl.
    1 lb strawberries, 6 oz blackberries, 6 oz blueberries, 6 oz raspberries, 10 mint leaves
  • Make the honey lemon syrup by whisking together the lemon zest, lemon juice, and honey in a small container.
    Zest of 1 lemon, Juice of 1 lemon, 3 tbsp honey
  • Pour the honey lemon syrup over the berries and toss gently to combine.
  • Using an electric hand mixer (or even a stand mixer) and a separate bowl, whip together the heavy cream, mascarpone, honey, and salt until it forms soft peaks.
    1 ½ cups heavy whipping cream, 1 cup mascarpone, 4 tbsp honey, ¼ tsp sea salt
  • Serve the berries with some mascarpone cream on top, and garnish with more lemon zest and mint, if desired.
