Combine all of the berries and mint in a large bowl.
1 lb strawberries, 6 oz blackberries, 6 oz blueberries, 6 oz raspberries, 10 mint leaves
Make the honey lemon syrup by whisking together the lemon zest, lemon juice, and honey in a small container.
Zest of 1 lemon, Juice of 1 lemon, 3 tbsp honey
Pour the honey lemon syrup over the berries and toss gently to combine.
Using an electric hand mixer (or even a stand mixer) and a separate bowl, whip together the heavy cream, mascarpone, honey, and salt until it forms soft peaks.
1 ½ cups heavy whipping cream, 1 cup mascarpone, 4 tbsp honey, ¼ tsp sea salt
Serve the berries with some mascarpone cream on top, and garnish with more lemon zest and mint, if desired.
