Ingredients

Dressing

  • 2 tbsp soy sauce use tamari for gluten free option
  • 2 tsp toasted sesame oil
  • 2 tsp lime juice
  • 1 tsp granulated sugar

Salad

  • 3 cups Persian cucumbers sliced into ¼ inch pieces
  • ¼ red onion sliced thin
  • 2 avocados cubed
  • 1 tbsp sesame seeds for topping

Instructions

  • Combine the dressing ingredients in a small bowl and whisk together.
    2 tbsp soy sauce, 2 tsp toasted sesame oil, 2 tsp lime juice, 1 tsp granulated sugar
  • Place the cucumber and red onions in a large bowl and toss them together. Pour the dressing over the cucumbers and onions and toss the salad. 
    3 cups Persian cucumbers, ¼ red onion
  • Add the avocados, then gently toss to combine with the other ingredients and the dressing. Note: mixing in the avocados at the end will help keep them intact and prevent them from getting mushy.

  • Sprinkle sesame seeds on top.
