Ingredients

Dressing

  • 2 tbsp low sodium soy sauce, use tamari for gluten free option
  • 2 tsp toasted sesame oil
  • 2 tsp lime juice
  • 1 tsp granulated sugar

Salad

  • 3 cups Persian cucumbers, sliced into ½ inch pieces
  • ¼ red onion, sliced
  • 2 avocados, cubed
  • 2 tbsp sesame seeds, for topping

Instructions

  • Combine the dressing ingredients in a small bowl and whisk together.
    2 tbsp low sodium soy sauce, 2 tsp toasted sesame oil, 2 tsp lime juice, 1 tsp granulated sugar
  • Place the salad ingredients in a large bowl and pour the dressing over everything.
    3 cups Persian cucumbers, ¼ red onion, 2 avocados
  • Gently toss to combine, then finish by sprinkling sesame seeds onto the dressed salad.
