5-ingredient breakfast burritos. Quick, easy, and 5-ingredient breakfast burritos. Quick, easy, and beginner-friendly. 

We love deluxe breakfast burritos as much as the next person, but sometimes we're craving something super simple that we can easily whip up on days/evenings when we're feeling overwhelmed. 

Make these for breakfast or breakfast-for-dinner when you want an easy, protein-packed, and portable meal in under 30 minutes.

For 1 burrito, you'll need:

10 inch flour tortilla
2 eggs, scrambled
1/4 to 1/2 cup shredded cheese
1 to 2 strips turkey bacon
1 hashbrown patty
Salt and pepper, to taste
A little oil for pan
Salsa or guacamole 

1. Bake the turkey bacon and hashbrowns in a 400F oven for 15-20 minutes, flipping over halfway through. 

2. While those bake, beat the eggs with a little salt and pepper, then scramble them in a pan with a touch of oil. Once almost cooked, mix in the shredded cheese. 

3. Chop up the cooked turkey bacon and top the eggs with it, then cut the hashbrown in half and place it on top of the bacon. 

4. Fold up the burrito, tucking in the sides, and place in the lightly oiled pan, seam-side-down. Toast on that side first for a few minutes, then continue toasting on all sides until golden brown.

5. Enjoy with salsa or guacamole (or both).

½ cup Dutch-process cocoa powder
½ cup hot strong coffee
¼ cup Bailey’s Irish Cream liqueur
½ cup granulated sugar
½ cup brown sugar packed
⅓ cup neutral-flavored oil
2 eggs
½ cup sour cream
1 tsp vanilla extract
