Why You’ll Love This Breakfast Hash
- Rich in nutrients and flavor. This dish is high in vitamins, protein, and fiber, making it a relatively healthy breakfast hash and a nutritious addition to your morning meal. Plus, eating vegetables at breakfast is a great and healthy way to start your day.
- Great for brunch or dinner. While intended as a breakfast or brunch dish, this recipe is also great for a main meal at dinnertime. Breakfast-for-dinner is one of our favorite kinds of meals!
- Hearty but not heavy. This dish will fill you up without making you feel weighed down. It’s a great option for those busy winter days when you need to keep your energy up!
- Tastes like something you’d order at a restaurant. We love seeing breakfast hash on restaurant menus because we know it’s going to be full of flavor and super hearty. The great thing about this recipe is that you can make it in the comfort of your own home. That means no long wait times for a table and no surprisingly high bill at the end.

Ingredients in This Sweet Potato Breakfast Hash
- Sage – sage is a subtle flavor so you’ll need quite a few leaves for a noticeable taste. We love adding it to sweet potato breakfast hash, pastas, and even soups.
- Breakfast sausage – use your favorite store-bought breakfast sausage or make your own. We like pork or turkey breakfast sausage with this dish.
- Red onion – these add a nice sharpness for balance. Make sure to thinly slice the onions so they don’t overpower the other ingredients.
- Sweet potato – cutting the sweet potatoes into small, uniform cubes will help them cook faster and more evenly.
- Swiss chard – we love the flavor of chard with this hash, but you could also use kale, mustard greens, or any other hearty leafy green.
- Seasoning – this hash is seasoned with poultry seasoning (a mixture of dried thyme, sage, and other herbs and spices), salt, pepper, and red pepper flakes.
- Eggs – as with any good breakfast hash, this one is topped with fried eggs. We like ours over easy, but feel free to cook them however you like.
How to Make This Skillet Breakfast Hash
- Fry the sage in 2 tablespoons butter or oil for about 3 minutes until it’s lightly browned and toasted. Remove the leaves from the pan and save for later.

- In the remaining butter, cook 1 pound of your preferred breakfast sausage (remove from casing if there is any) in the same pan, breaking the sausage up into crumbles. This should take about 10 minutes. Remove the cooked sausage from the pan and set aside for later.
- Add the onions to the pan and cook for about 3 minutes.
- Add 1 to 2 tablespoons of butter or oil if your pan is looking dry, then add the sweet potato, poultry seasoning, red pepper flakes, salt, and pepper. Toss and cook for 10 to 15 minutes until potatoes are soft.
- Add the chard, season with a pinch of salt, and cook until it’s wilted (roughly another 3 to 4 minutes).
- While the chard wilts, add a little oil to a separate pan over medium-low heat (about 1 tsp per egg). Crack the eggs into the pan and season each with a pinch of salt and cracked black pepper. Fry your eggs according to your liking. For sunny-side up, fry them until the whites are cooked and set and the yolk is still runny, about 3 minutes.
- Return the cooked sausage to the pan with the sweet potatoes and chard and toss everything together.
- Plate each serving of sweet potato hash with a fried egg and some fried sage leaves.

Our Tips for the Best Sweet Potato Breakfast Hash

Variations and Substitutions
In our opinion, a good breakfast hash has 4 main components: potatoes, protein, veggies, and fried (or even poached) eggs. You can change these up, depending on your personal preference. Here are some variations you might like:
- Yukon gold potatoes, Italian sausage, onions and peppers, fried egg
- Russet potatoes, corned beef, green cabbage, poached egg
- Yukon gold potatoes, pancetta, spinach, over easy egg, freshly shredded Parmesan
- Sweet potatoes, white beans, kale, fried egg

Serving and Storage Suggestions
This dish is a whole breakfast itself, so it doesn’t need many other sides with it. If you want to make a heartier meal out of it, though, you can serve it with our Easy Parmesan Cheese Bread or our Simple Roasted Broccoli with Lemon.
